Halal meat production is a strictly regulated process that combines Islamic religious requirements with modern food safety standards, covering everything from animal sourcing to final packaging. What Makes Meat Halal

Halal meat must come from animals slaughtered according to Islamic law, known as zabihah, which requires a swift cut to the throat performed by a trained Muslim slaughterman while invoking a blessing. The method ensures the animal is treated humanely and that blood is fully drained from the carcass, since consuming blood is forbidden in Islam. Pork, alcohol, and any product containing blood or other prohibited (haram) substances are strictly excluded from halal production.

Sourcing Halal-Certified Livestock

Production begins with raw material selection: only beef (the base for our halal beef patties), lamb, chicken (used in our halal chicken hot dogs), and turkey from animals slaughtered under halal certification are accepted. Every batch of incoming meat is accompanied by halal certificates and veterinary documents, and suppliers undergo regular audits to confirm ongoing compliance. Animals used for halal meat are typically raised on natural feed without added antibiotics or hormones, which supports both quality and the ethical standards associated with halal food.

The Slaughter Process (Zabihah)

Before any product enters production, livestock is slaughtered according to specific religious rules that allow for complete blood drainage, making the raw meat safer and higher quality for further processing. The slaughter is performed facing a specific direction, accompanied by a prayer, and only healthy animals that pass veterinary inspection are used. This step is the foundation of halal status — no amount of downstream processing can make meat halal if the slaughter itself does not meet these requirements.

Dedicated Halal-Only Production Facility

Kazan Delicacies operates a facility fully dedicated to halal production, which eliminates any risk of cross-contamination with non-halal ingredients. An internal Halal Committee oversees compliance at every stage of the manufacturing process, working alongside external certification from the Halal Committee of the Spiritual Administration of Muslims of the Republic of Tatarstan (DUM RT). The plant runs on a multi-shift schedule (2–3 shifts daily), allowing flexible, uninterrupted output — including high-volume lines such as our halal sausages for hot dogs — to meet distributor demand.

The production process integrates the HACCP food safety system and complies with GOST R ISO 22000 requirements, with daily quality checks performed on every shift, including sensory and laboratory testing. In addition to internal controls, the facility undergoes both scheduled and unscheduled inspections by regulatory bodies, along with an annual halal certification audit. Modern European and Russian equipment with a high degree of automation is used throughout, and the use of artificial preservatives is minimized and strictly regulated.

Natural Ingredients and Recipe Standards

Pork, blood, alcohol, and any other prohibited components are completely excluded from every formulation — including cured items such as our halal pepperoni. Any food additives used are permitted under technical regulations and separately confirmed to meet the halal standard.

Freshness, Cold Chain, and Packaging

To preserve product quality, the facility uses vacuum packaging, shock freezing, and precise temperature control throughout processing. The cold chain must stay between 0°C and +4°C at all times, and transportation is carried out exclusively in specialized refrigerated vehicles — joint transport with non-halal products is strictly prohibited. Depending on the category — from halal frankfurters and sausages to halal burger patties — shelf life for chilled products typically ranges from 7 to 45 days, and the company maintains a 2–4 week strategic stock of raw materials and finished goods to ensure supply stability.

Traceability From Farm to Shelf

A full traceability system allows every batch to be tracked back to its raw material origin, production date, and shipping destination. Incoming raw materials are checked for documentation, labeling accuracy, and temperature before being approved for use — batches without a complete document package are never accepted into production. Every shipment to a distributor, including bulk orders of halal sausages available wholesale, includes a full documentation package with conformity certificates and a valid halal certificate, with labeling compliant with TR CU 022/2011 and customizable for specific import markets.
